Executive Chef  Shawn Paul Dalziel

Born in Malibu, California in 1970, Shawn’s passion for food began at a young age.  Spending much of his early years in his father’s popular Hollywood restaurant, Two Dollar Bills, where the first all you can eat salad bar was introduced to America, it instilled in him the “restaurant way of life”.  Since then, Shawn has been coast to coast working at a range of restaurants, doing what he loves – touching people’s lives and filling their bellies and souls.

Currently, Shawn is the executive chef at Bistro 18 in Montclair, NJ an intimate neighborhood restaurant featuring new American cuisine with European and Asian influences. Featuring organic meat, wild fish and house-made pasta, the Bistro 18 menu is inspired by fresh, local ingredients.

Prior to Bistro 18, Shawn was the executive chef at Recipe on New York’s upper west side.  He opened the restaurant with the owner to rave reviews in 2009.  Prior to Recipe, Shawn spent four years, at the high volume, Blue Water Grill, consistently rated by Zagat as one of New York’s “Most Popular” restaurants.  He started his career on the east coast working at “Rocco’s 22nd Street” with celebrity chef Rocco DiSpirito on the first season of the reality TV show, The Restaurant.

After graduating UCLA with a BA degree, Shawn began his traditional culinary training in San Francisco, at California Culinary Academy. After completing the program at CCA, he stayed in San Francisco moved on to work at the Tuscan restaurant Delfina in the Mission district.  Subsequently, he had the privilege to work under Michael Mina and hone his skills at the world renowned restaurant, Aqua.

During his career, Shawn has received positive reviews from a variety of well known publications and food blogs including The New York Times, Metro Mix, The Isatiable Critic and others.  Being a California native, Shawn loves good wine, the outdoors and the fascinations of the natural world.  When he’s not doing it up in the kitchen, he enjoys spending time with his wife and daughter exploring Montclair, where they recently moved from New York City.
